The workshop

Make a better burger from scratch.

Join us at Henry and the Fox for a hands-on Father’s Day workshop built around proper burgers, outdoor grilling and cold beer.

Executive Chef Malcolm Williams and Terry P will guide you through the full process—from choosing the right cuts of beef and preparing your burger mix to forming, seasoning and cooking the patties over high heat.

You’ll also make three house-made condiments, build your finished burger and sit down together for a Father’s Day feast. The remaining condiments and burger patties are packed for you to take home.

The burger blend

70 Chuck
30 Brisket

Why the blend matters

Fat, flavour and the right texture.

Learn why chuck and brisket work together, how to prepare the beef without overworking it, and how the blend affects the finished burger.

What you’ll learn

From beef
to burger.

Work through the complete process with Malcolm and Terry, learning the techniques that make a better burger at home.

  1. Select

    Choose and prepare the beef

Learn which cuts work best for burgers and use practical knife skills to prepare the meat before mincing.

  2. Mince

    Create the burger mix

Freshly mince the chuck and brisket while learning how texture and handling affect the finished patty.

  3. Form

    Shape and season the patties

Form evenly sized patties, season them properly and prepare them for cooking without overworking the beef.

  4. Grill

    Cook and build your burger

Cook the patties over high heat on the outdoor grill, then bring everything together in a properly balanced burger.

What you’ll make

Great burgers need great condiments.

Prepare and jar three house-made burger condiments during the workshop. Use them to build your burger on the day, then take the remaining jars home.

  1. House-made condiment

    Spiced
    Zucchini Pickle

  2. House-made condiment

    Beer &
    Honey Mustard

  3. House-made condiment

    BBQ Sauce

Make, jar and take home

Three condiments for your next burger night.

Use each condiment in your burger during the workshop, with the remainder packed up for you to take home.
