The masterclass

From the Amalfi Coast to your plate

Spend two hours cooking, learning and sharing a meal with Executive Chef Malcolm Williams at Henry and the Fox.

Working in pairs, you’ll learn how to mix, shape and roll lemon and ricotta ndunderi by hand, then prepare a pork and fennel ragu to serve alongside it.

Malcolm will guide you through each stage while sharing the techniques and traditions behind the dish. Once the cooking is complete, everyone will sit down to enjoy their handmade gnocchi with rocket and parmesan salad and a glass of Prosecco.

    Make the ndunderi

    Mix lemon and ricotta dough, then learn how to portion, shape and roll the traditional Amalfi Coast-style gnocchi by hand.

    Prepare the ragu

    Cook a pork and fennel ragu while learning how the ingredients and cooking process build flavour throughout the dish.

    Sit down and dine

    Enjoy your handmade gnocchi with rocket and parmesan salad and a glass of Prosecco, followed by chocolate cannoli and coffee.

Cook alongside Executive Chef Malcolm Williams

Malcolm will guide the class from the first mix of the dough through to shaping, cooking and serving your finished ndunderi.

This is a practical class, with demonstrations followed by plenty of time to try each technique yourself. Working in pairs, you’ll be able to ask questions, get help when needed and understand why each stage matters.

Malcolm will also share the traditions behind Amalfi Coast ricotta gnocchi and practical advice to help you recreate the dish at home.

Taking part with a dietary requirement

Vegan, halal, vegetarian and gluten-free options are available. Select the appropriate ticket during checkout so the kitchen can prepare the required pasta, ragu and dessert alternatives.

01 Vegan

Vegan option

A Mediterranean ragu will be provided instead of the pork and fennel ragu.

Vegan guests will join everyone else during the ricotta gnocchi-making portion of the class. When the pasta and ragu are combined, vegan pasta will be provided for their finished dish.

A suitable dessert alternative will also be provided in place of the chocolate cannoli.

02 Halal & vegetarian

Halal or vegetarian option

A Mediterranean ragu will be provided instead of the pork and fennel ragu for halal or vegetarian guests.

Guests will otherwise take part in the class alongside the rest of the group, making the lemon and ricotta gnocchi and learning the same techniques.

03 Gluten-free

Gluten-free option

Gluten-free guests will join everyone else during the ricotta gnocchi-making portion of the class.

When the pasta and ragu are combined, gluten-free pasta will be provided for their finished dish.

A suitable dessert alternative will also be provided in place of the chocolate cannoli.
