The masterclass

From the Amalfi Coast to your plate

Spend two hours cooking, learning and sharing a meal with Executive Chef Malcolm Williams at Henry and the Fox.

Working in pairs, you’ll learn how to mix, shape and roll lemon and ricotta ndunderi by hand, then prepare a pork and fennel ragu to serve alongside it.

Malcolm will guide you through each stage while sharing the techniques and traditions behind the dish. Once the cooking is complete, everyone will sit down to enjoy their handmade gnocchi with rocket and parmesan salad and a glass of Prosecco.

Cook alongside Executive Chef Malcolm Williams

Malcolm will guide the class from the first mix of the dough through to shaping, cooking and serving your finished ndunderi.

This is a practical class, with demonstrations followed by plenty of time to try each technique yourself. Working in pairs, you’ll be able to ask questions, get help when needed and understand why each stage matters.

Malcolm will also share the traditions behind Amalfi Coast ricotta gnocchi and practical advice to help you recreate the dish at home.

Vegan option

A Mediterranean ragu will be provided instead of the pork and fennel ragu.

Vegan guests will join everyone else during the ricotta gnocchi-making portion of the class. When the pasta and ragu are combined, vegan pasta will be provided for their finished dish.

A suitable dessert alternative will also be provided in place of the chocolate cannoli.

02 Halal & vegetarian

Halal or vegetarian option

A Mediterranean ragu will be provided instead of the pork and fennel ragu for halal or vegetarian guests.

Guests will otherwise take part in the class alongside the rest of the group, making the lemon and ricotta gnocchi and learning the same techniques.

03 Gluten-free

Gluten-free option

Gluten-free guests will join everyone else during the ricotta gnocchi-making portion of the class.

When the pasta and ragu are combined, gluten-free pasta will be provided for their finished dish.

A suitable dessert alternative will also be provided in place of the chocolate cannoli.

01 When are the festive menus available?

Our festive menus are available from 30 November to 20 December 2026.

02 Which menu is best for my group size?

The Festive Choice Menu can be enjoyed by groups of up to 18 people.

The Festive Shared Menu is available for groups of 19 people or more.

03 What happens if our group has 19 or more guests?

For groups of 19 people or more, we offer the Festive Shared Menu.

If your group would prefer the Festive Choice Menu, we can offer this as an alternate drop menu. This means two dishes are selected in advance and served alternately to guests on the day.

Alternatively, we can arrange a pre-order from the Festive Choice Menu in advance.

04 Can larger groups still have the Festive Choice Menu?

Yes. For groups of 19 people or more, the Festive Choice Menu may be available as either an alternate drop menu or by arranging a pre-order in advance.

Your event coordinator can talk you through the best option for your group.

05 How does the two-course Festive Choice Menu work?

If a two-course Festive Choice Menu is selected, all guests in the group must enjoy the same two courses.

For example, the group may select entrée and main, or main and dessert, but the selected courses must be the same for all guests.

06 Do we need to pay a deposit?

Yes. As this is a busy time of year and we seek to cater for many guests celebrating the festive season, a deposit is required to secure your booking.

07 Can we order from the regular menu?

Yes, in some cases groups may be able to order from our regular menu or select from our regular function packages.

However, on key dates such as Thursdays and Fridays in December, we do ask that groups arrange one of our Festive Menus. This helps us provide the best possible experience for all guests during peak festive periods.

Your event coordinator will guide you on menu availability.

08 When do you need final numbers?

Final guest numbers are required two weeks before your reservation date.

We understand things can change. If you work with us, we are happy to work with you on unforeseeable changes.

09 When do you need dietary requirements?

All dietary requirements are required two weeks before your reservation date, along with your final guest numbers.

We ask that groups provide the names of guests with dietary requirements so we can find and assist them more easily on the day.

10 Will we receive the full booking terms?

About the event

Friendly rivalry. Serious food and wine.

Western Australia and South Australia are going head-to-head for a fun, interactive afternoon of wine, food, stories and friendly rivalry.

Hosting the showdown is Terry P, keeping the afternoon moving, the rivalry alive and the voting honest. Aidan Considine from Nelson Wine and Cameron Smith from House of Fine Wine will introduce the contenders, share the stories behind the wines and make the case for their favourites.

In the kitchen corner, Executive Chef Malcolm Williams has created a five-course menu designed to put every pairing to the test.

For each course, you’ll taste the competing wines, hear their stories and cast your vote. There are no expert judges and no wrong answers—your opinion counts.

Once the final voting cards are counted, Terry will reveal which state has earned the title.

A relaxed, hands-on Christmas workshop for families, couples, friends, workmates and small groups.

Spend a festive Saturday morning building your own gingerbread house in the heart of Melbourne’s CBD.

Executive Chef Malcolm Williams, Head Chef Nick Marriott and the Henry and the Fox team will show you how to assemble the structure, add the finishing touches and keep everything standing.

Then it is over to you. Choose from a mix of modern and nostalgic lollies, sweets and Christmas decorations to create a gingerbread house that is entirely your own. Festive welcome drinks and food stations will be available throughout the workshop.

We will have the gingerbread, decorations and equipment ready. All you need to bring is your imagination—and perhaps a little patience while the icing sets.

Join Executive Chef Malcolm Williams and Terry P for a hands-on burger workshop where you’ll grind, season, build and cook burgers properly — from choosing the right cuts of beef through to firing them on the outdoor grill.

About the Class

This masterclass takes you through the essential elements of classic Italian antipasto and aperitivo culture.

You’ll begin with a hands-on session led by Executive Chef Malcolm W alongside antipasto enthusiast Terry P, learning how to prepare, pickle and preserve a range of Italian favourites.

From bright vegetable pickles to rich olive tapenade and coastal-style pickled calamari, this class is all about simple ingredients, proper technique and big Mediterranean flavour.

After the hands-on session, we step behind the bar for a relaxed introduction to Italian aperitivo culture. Our bar team will guide you through classic drinks including the Negroni, Hugo Spritz, Limoncello Spritz and Bellini, served alongside a curated antipasto tasting platter.

It’s practical, generous, approachable and designed to give you ideas you can recreate at home.

What You’ll Learn

In this hands-on cooking class, you’ll learn how to:

Discover the technique behind one of the most iconic breakfast sauces. Our chefs will guide you through the fundamentals of emulsification while teaching you how to troubleshoot and perfect this classic sauce.

Gin & Beetroot Cured Kingfish Demonstration

Learn the fundamentals of fish curing including flavour balance, curing times and slicing techniques as our chefs demonstrate how to create beautifully cured kingfish.

Build Your Own Brunch Plate
